Asparagus Nests

Asparagus Nests

This one-pan meal can be pulled together in just 12 minutes and requires only 8 ingredients, including salt, pepper and oil. I’ve fed it to my family for brunch, lunch and dinner, and they asked for more for breakfast the next day. Round out the meal with a side of creamy polenta or grits. Or serve it over a bed of chewy farro or wheat berries. If you can spare the extra mostly hands-free cooking time, my favorite accompaniment to this, however, is Rosemary Roasted Potatoes.

Creamy Mashed Cauliflower with Garlic and Herb Pistou

Creamy Mashed Cauliflower with Garlic and Herb Pistou

Once you try creamy mashed cauliflower, you may turn your back on mashed potatoes for good. You’ll be the hero of the holiday feast, providing a light, healthful and vegan option that is still killing it with fall flavor. We recommend topping it with a fresh garlic, rosemary, parsley and thyme pistou.

Roasted Romanesco with Lemony Anchovy Dressing & Garlic Herb Croutons

Roasted Romanesco with Lemony Anchovy Dressing & Garlic Herb Croutons

Armed with a can of anchovies, a lemon, and herb garlic butter from my freezer, I was determined and craving caesar salad. That’s when I discovered a head of romanesco. So I married my simply roasted romanesco with the components of caesar salad. Make this dish for an easy and healthy, vegetable forward weeknight dinner, perfect for the busy holiday season. It serves two as a main dish or 4-6 as a side or appetizer.
