Make Ahead Mole and Margaritas

Gather with friends for a pre-Cinco de Mayo cocktail party. We’ll whip up drinks to sip along with queso to dip. All the while you will create and simmer a divine mole sauce for use in a whole range of Mexican inspired dishes. Mole is a traditional Mexican sauce made from re-hydrated fruit, chili peppers, spices, nuts, seeds and CHOCOLATE. One misconception is that a good version needs to simmer for hours, even days. In this class you’ll learn how to make a proper sauce full of Oaxacan flavor in just 90 (mostly hands off) minutes. After class or on Cinco de Mayo proper, use your prepared sauce for an indulgent dish of Chicken Mole or assemble Mushroom Mole Tacos. This sauce also freezes well for future use, like a big pot of Pumpkin Mole Bisque come October. (Teaching Table’s recipes provided.)

Menu is 100% vegetarian and gluten free. Additional modifications and substitutions are available.

This is a VIRTUAL LIVE COOKING CLASS. Recording will be made available.

Some prep is required. A spice grinder or mortar and pestle and a blender is highly recommended for this class. You will receive a list of ingredients, materials and prep instructions at least 2 weeks prior to class. You will also receive all of the recipes for using your homemade mole sauce.
