Cooking with Eggplant

Got eggplant? Go beyond eggplant parmesan in this class! Learn all about eggplants and how to prepare them. Differentiate between varieties of this delicious vegetable, note its nutritional benefits and most importantly, practice how to maximize its flavor and texture in every dish you make. We’ll discuss and practice 4 eggplant dishes, but you’ll also get a few bonus recipes to try on your own and brainstorm eggplant dishes with your classmates. Get yourself a few big purple bulbs at the farmer’s market and get ready to do your best Cooking with Eggplant.

In this class, you will make:

  • Pasta alla Norma, Eggplant, Basil, Ricotta Salata, Cherry Tomato

  • Italian Brined Eggplant, Vinegar, Oregano, Raisins, Anchovies (optional)

  • Baba Ghanoush, Smoky Eggplant Spread with Homebaked Pita (optional)

  • Miso Glazed Eggplant Wedges

This is a virtual hands-on class. There is some prep required for this class. You’ll receive a detailed ingredients, materials and prep list at least 1 week before class. No special tools or equipment required.
